Red Cow was conceived around the kitchen table, as Luke, Tracy, and their sons Michael and Peter brainstormed around what kind of restaurant they would like to build together. With four locations around the Twin Cities, it is no wonder that it was voted “Best Burger” by Mpls/St. Paul Magazine twice and ranked as one of the hottest burgers in North America by Eater. What grabbed my attention however, was the peace dove in the center of the paintings that covered the plywood. Art’s power comes from the connections it can foster and the dove took me back to my childhood when I recited my poem “The little dove” on national television. I was only 11 and the poem is about the 1974 invasion that left Cyprus divided: “A little dove flutters over the dragon’s cave, all it wants to do is ask for freedom from the small, old olive tree.” A dove painting is now the centerpiece over my fireplace mantle.
